In Italy, Sunday lunch can easily last until the evening. The secret isn't elaborate cooking; it's pacing and generosity.

Start with antipasti

Put out bread, olive oil, cured meats, cheese and a few marinated vegetables while everyone arrives. Nobody should wait hungry.

One great pasta, one simple secondo

Serve a pasta course family-style, then something roasted or grilled with a green salad. Two courses done well beat five done in a rush.

Finish slowly

Fruit, a simple dolce, espresso and perhaps a small digestivo. Clear the table, not the guests.
